Ingredients for the muffins:
- 200g of flour
- 1 teaspoon of baking powder
- A pinch of salt
- 120g of butter (softened)
- 150g of sugar
- 2 eggs
- 1 teaspoon of vanilla extract
- Juice and zest of 1 lemon
- 120 ml of milk
Ingredients for lemon pudding:
- 250 ml of milk
- 2 egg yolks
- 50g of sugar
- 20g density
- Juice and zest of 1 lemon
- 1 teaspoon of butter (for smoothness)
Preparing the muffins:
Mix the flour, baking powder and salt. Beat the butter and sugar separately until they become foamy. Add the eggs one at a time, followed by the vanilla, lemon juice and zest. Add flour mixture and milk alternately, beating until smooth. Pour the mixture into a muffin tin lined with paper baskets. Bake in a preheated oven at 180°C for about 20-25 minutes. Leave the muffins to cool completely.
Preparation of pudding:
Heat the milk in a saucepan over medium heat until warm but not boiling. In a bowl, mix the egg yolks, sugar, pulp, lemon juice and zest. Gradually add the warm milk, whisking constantly to avoid lumps. Return the mixture to the pan and cook over low heat, stirring constantly, until the pudding thickens. Remove from heat and stir in a teaspoon of butter. Leave to cool. When the muffins are completely cooled, make a hole in the center of each one and fill with the prepared lemon pudding.
When serving, you can sprinkle with powdered sugar.
