Stir fry chicken with oyster sauce

For this recipe, you can use ingredients available at Super Vero markets, such as oyster sauce, dark soy sauce and noodles – authentic Asian products that will give the dish a real taste.

Ingredients:

 

  • Chicken meat (cut into cubes)
  • Shiitake mushrooms
  • Asian noodles (rice or soy noodles)
  • 1 onion (finely chopped)
  • 1 garlic (finely chopped)
  • 1 red pepper (cut into strips)
  • 1 carrot (cut into rings)
  • Spring onion (green part, chopped for garnish)
  • Soy sauce
  • Sesame oil
  • Dark soy sauce
  • Oyster sauce
  • White pepper
  • Asian vegetables (to taste)
  • Oil for frying

Preparation:

 

1. Prepare the mushrooms. For shiitake mushrooms (which you’ll buy dry), Costa advises soaking them in water for 2 to 3 hours, then draining and cutting them as desired. So they are ready for further preparation.

2. The next step is to make the sauce. Mix finely chopped garlic, soy sauce, sesame oil, dark soy sauce, oyster sauce and white pepper in a bowl – this is what will make the magic!

3. Preparation of noodles. Soak the noodles in cold water for 30 minutes, then drop them into boiling water for 3 to 5 minutes. Drain them when they are done and then they are ready to be thrown into the wok/pan.

4. Preparation of wok chicken: Heat the oil in a wok or pan. Add the chopped onion and fry until translucent. Then add the diced chicken meat and season to taste with Asian veggie. Fry until the meat is golden brown.
When the meat is browned, add the vegetables. First add the shiitake mushrooms, the red pepper cut into strips, then the carrot cut into rings. Fry until the vegetables are soft but remain crunchy. Then add the prepared sauce, mix well and finally add the noodles. Mix everything well so that the flavors combine and the noodles soak up the sauce.
