Lamb on a short skewer

Buy fresh lamb at Super Vero markets and enjoy this traditional dish with a Greek touch (κοντό σουβλάκι or “short skewer” in Serbian).

Ingredients:

 

  • Lamb with origin
  • Olive oil (to taste)
  • Salt (to taste)
  • Pepper (to taste)

Preparation:

 

1.Preparation of the lamb: Cut the meat into smaller pieces.

2. Marinating: Simply marinate the pieces with olive oil, salt and pepper. Let sit for 30-60 minutes or, even better, overnight, to allow the lamb to absorb the flavors.

3. Skewering: Hold the skewer steady, place the pieces one to another, to roast evenly – this Greek way (kontó souvláki) is quite common and great for large parties and gatherings.

4. Roasting: Place the skewer on the grill mechanism and roast on high heat for about 1-2 hours, turning occasionally. When done, remove and rest for 10 minutes before slicing.

5. Serving: Serve warm with salad, ajvar or pie – ideal for family gatherings in nature!

Tips:
