Melon sorbet

Melon sorbet is a refreshing and light dessert. The combination of juicy melon, fragrant lemon peel and the mild sweetness of honey makes it an ideal choice for warm days. The preparation is simple, and the result is a rhapsody of fruity flavors.

Ingredients:

  • 800 g of cleaned ripe melon
  • 2–3 spoons of honey
  • Juice and grated zest of 1 lemon
  • A pinch of salt

Preparation:

  1.  Chop the melon into pieces and put it in a blender. Add honey, lemon juice and zest, as well as a pinch of salt.
  2.  Blend until you get a completely smooth mixture.
  3.  If using an ice cream maker, pour in the mixture and mix until it becomes sorbet. If you are not using the appliance, pour it into a shallow dish and put it in the freezer. Stir with a fork every 30-45 minutes, until the mixture becomes airy and creamy (about 3-4 hours).
  4.  Before serving, leave for a few minutes at room temperature to soften. Serve in balls, garnished with a mint leaf or a lemon wedge.

Tips:

  • Lemon zest adds aromatic freshness and rounds off the taste.
  • A pinch of salt, although it seems unexpected in sweet recipes, actually enhances and balances the flavors – especially the sweetness of melon and honey.
  • For an even finer sorbet texture, strain the mixture through a sieve before freezing to remove any lumps.
