Traditional Greek dish with sausages ‘Spetsofai’

Ingredients for 1.5kg:

  • 150 ml of olive oil
  • 600 g of Myconos or Santorini sausages
  • 50 g chopped garlic
  • 200 g of chopped onion in semicircles
  • 400 g green peppers
  • 300 g red pepper
  • 60 g tomato puree
  • 150 ml of Retsina white wine
  • 350 g of chopped tomatoes
  • 350ml of broth (of your choice)
  • 8 g of salt
  • 1 g of pepper

Fry the sausages in olive oil. When they are ready, take them out and set them aside. Add chopped garlic, fry a little and add chopped onion in the same pan. Fry until soft. Add chopped peppers (in strips), and fry them until soft. Then add tomato puree, and add white wine to it all. Allow the alcohol to evaporate and add the chopped tomatoes, broth and chopped fried sausages. Add salt and pepper and let the dish simmer until the excess liquid evaporates and until all the ingredients are combined and turned into a nice thick sauce.
