Spanacorizo ​​with marinated anchovies

Spanakorizo is a traditional greek dish that combines spinach and rice. Its simple preparation and nutritious ingredients make it an ideal lunch. When enriched with marinated anchovies, it gains complexity and a more intense flavor.

Ingredients:

  •  200g marinated anchovies
  • 200g rice
  • 500g fresh spinach
  • 1 medium onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 1 large carrot, grated
  • 1 tomato, peeled and finely chopped
  • 1 lemon (juice and zest)
  • 50ml olive oil
  • 1 teaspoon dried oregano
  • 500ml broth
  • 50g feta cheese, crumbled
  • Fresh parsley for garnish
  • Salt and pepper to taste

Preparation:
Wash the rice with cold water and let it drain. Wash the spinach thoroughly and cut it into larger pieces. In a large pan, heat the olive oil over medium temperature and sauté the chopped onion until it becomes translucent, then add the garlic and sauté for another 5 minutes. Add the grated carrot and chopped tomato to the pan and cook until they soften. Add the rice and stir well to combine all the ingredients. Pour in the broth and bring it to a boil. Reduce the heat, cover the pan, and cook until the rice is almost done, about 15 minutes. Add the spinach to the pan and stir until it softens and blends with the rice. Then add the marinated anchovies and lemon juice. Cook for another 5 minutes until all the flavors meld together. Remove the pan from the heat, and add the grated lemon zest and crumbled feta cheese. Stir gently.

Serve warm, garnished with fresh parsley.
