Ingredients:
- 400 g spaghetti
- 300g of tuna in olive oil
- 1 red onion, finely chopped
- 2 cloves of garlic, finely chopped
- 200g cherry tomatoes
- 50g black olives, chopped
- 1 lemon
- 1 teaspoon of capers
- Fresh basil, chopped
- 50g grated parmesan
- Olive oil
- Salt and pepper to taste
Preparation:
Cook the spaghetti, drain, and reserve some of the cooking water.
Heat a little olive oil in a pan and sauté the finely chopped red onion until it softens and turns golden. Add the garlic and sauté a bit longer. Add the halved cherry tomatoes and cook until they soften. Towards the end, add the olives, capers, and tuna along with the oil from the cans, and mix well. Cook briefly until everything combines and heats through. Add the cooked spaghetti, along with the reserved cooking water. Squeeze in the lemon juice and season to taste.
Serve the tuna spaghetti warm, sprinkled with fresh basil and grated parmesan. Enjoy!
