- 4 chicken thighs (with skin and bone)
- 1 red bell pepper
- 1 small broccoli
- 1 onion

- 100g grated mozzarella
- 1 teaspoon oregano
- Salt and pepper to taste
- 1 teaspoon olive oil
- 1/2 cup white wine
- 2 teaspoons olive oil for brushing the chicken
Instructions:
In a skillet, heat a teaspoon of olive oil and sauté the onion and garlic until translucent. Add the chopped red bell pepper, zucchini, and tomato sauce. Sauté until the vegetables are softened. Season with salt, pepper, and oregano. Let the mixture cool while you prepare the chicken. Carefully cut along the bone of each chicken thigh to create a pocket for stuffing.
