Raw summer cake with greek yogurt and cherries

We present a recipe for a raw cake with Greek yogurt and cherries. This cake is refreshing, healthy, and easy to prepare, ideal for warm summer days as it requires no baking. As the Super Vero assortment now includes Mandrekas Greek yogurts, we suggest using them. Mandrekas yogurts have been produced for 73 years using a traditional recipe on the island of Corinth. They are made from 100% fresh cow’s milk, giving them an intense and rich flavor, and contain 3.85% milk fat. Besides classic cow’s yogurt, you can also try other interesting flavors: vanilla, cocoa, caramel, and pistachio. For this cake, you can choose the yogurt of your preference to enhance its flavor.

Ingredients
Crust:
– 200 g almonds
– 200 g dates, pitted
– 2 tablespoons coconut oil
– 1 teaspoon vanilla extract
– A pinch of salt

Filling:
– 400 g Greek yogurt
– 200 ml coconut milk (only the thick cream from the top of the can)
– 3 tablespoons honey or maple syrup
– 1 teaspoon vanilla extract
– Juice of 1 lemon

Fruit layer:
– 300 g cherries, pitted
– 2 tablespoons honey or maple syrup
– 1 tablespoon lemon juice
– Fresh mint leaves

Preparation
Crust:
Grind the almonds. Add dates, coconut oil, vanilla extract, and a pinch of salt. Mix until all ingredients are combined into a sticky mixture. Spread the mixture on the bottom of a cake mold lined with baking paper, forming an even layer. Chill in the refrigerator while preparing the filling.

Filling:
In a large bowl, mix Greek yogurt, thick coconut cream, honey (or maple syrup), vanilla extract, and lemon juice. Stir until you get a smooth and creamy mixture. Evenly spread the filling over the crust. Return to the refrigerator to set, about an hour.

Fruit layer:
In a bowl, mix halved cherries, honey (or maple syrup), and lemon juice. Gently stir to combine all ingredients. Once the filling has set, spread the fruit layer over it. If desired, add fresh mint leaves for decoration. If you’re not a fan of cherries, you can choose other red fruits to your liking. Return the cake to the refrigerator to cool and set all layers well.
