This week, we suggest a healthier meal. Considering it’s the fasting season, this is a great way to try something different yet equally delicious. Quinoa is extremely rich in proteins, fibers, vitamins, and minerals such as iron, calcium, and magnesium, making it an ideal choice to support the immune system.
Below is the recipe with the necessary ingredients and preparation method.
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water
- 300g shrimp, cleaned and peeled
- 2 tablespoons olive oil
- Salt and pepper
- 1 cup chopped vegetables of your choice (tomato, cucumber, bell pepper, avocado)
- 1/4 cup chopped fresh parsley
Dressing Ingredients:
- Juice of 1 lemon
- 2 tablespoons olive oil
- 1 clove garlic, finely chopped (optional)
Preparation:
Cook quinoa over medium heat for about 15 minutes or until all the liquid is absorbed. Remove from heat and let it cool. In a pan, heat a tablespoon of olive oil. Add cleaned shrimp and fry them for 2-3 minutes on each side until they turn pink. Season to taste and add garlic if desired. In a large bowl, mix the cooled quinoa with chopped vegetables, parsley, and fried shrimp. On the side, prepare the salad dressing with lemon juice and 2 tablespoons of olive oil. Add salt, pepper, and garlic according to your preference. Pour the dressing over the salad and mix well to combine all the ingredients.
Leave the salad in the refrigerator for about 15-30 minutes before serving so flavors can meld.
