Potato salad

Potato salad is a simple but irresistible side dish that goes perfectly with many dishes. With a few tricks, you can take it to the next level and make it even tastier.

Ingredients:

  • 1 kg of potatoes
  • 1 onion (finely chopped)
  • 1 leek (cut into rings)
  • 5-6 radishes (thinly cut into rings)
  • 3 tablespoons of oil
  • 2 tablespoons of vinegar
  • Salt and pepper
  • Fresh parsley

Preparation

Wash the potatoes and cook them in their skins until soft (but do not overcook). When cool enough to handle, peel and cut into thin rounds or cubes.

Mix oil, vinegar, salt and pepper. Separately, put the potatoes, onions, leeks and radishes in a large bowl and pour the dressing over it. Add fresh parsley. Leave the salad in the refrigerator for at least an hour before serving so that the potatoes absorb all the flavors.

Tips

Add dressing to warm potatoes: Warm potatoes absorb the flavors of the dressing better.

Crunchy toppings: Radishes add a refreshing crunch, and you can add chopped pickles or scallions for extra crunch.

For a creamier version: If desired, add a spoonful of mayonnaise or Greek yogurt. Enjoy! 😊
