It represents a traditional specialty in many parts of our country, and certainly a dish of rich holiday tables. Every housewife or host has their own little secret for preparing the most delicious baking.
And if you haven’t tried it yet, we invite you to try oven-roasted pork shoulder with this method of preparation, because we believe that, just like us, you will get soft meat that melts in your mouth, and you will ask for a little more.
- 1 kg of pork shoulder
- 50g of smoked bacon
- 1 spoon of mustard
- ½ teaspoon of salt
- ½ teaspoon of pepper
- ½ teaspoon of smoked paprika
- ½ teaspoon of herbal seasoning
- 2-3 tablespoons of oil
- 3 large white potatoes
Cut the shoulder with a sharp knife in several places and place a piece of bacon in each opening. Use your finger to widen the opening to make it easier to insert the bacon. Coat the meat with mustard and sprinkle the spice mixture on the other side. Place the shoulder in the dish in which it will be baked and leave it in the refrigerator for 1-2 hours.
After that time, cover the meat with oil, and pour a glass of water on the side. Arrange the potato pieces around the meat. Spray it with oil and salt. Cover the baking sheet with paper (wet the paper to make it easier to bend) or aluminum foil and bake in the oven at 180’C for an hour.
After that time, it is necessary to remove the paper and turn the meat to the other side and bake without the paper. You can increase the temperature to 200-210’C.
When browned, turn the meat to the other side so that it also browns.
Cool the roast, then cut into slices and serve with potatoes. Pour over the meat and potatoes with the sauce in which they were baked. In addition to potatoes, you can also add carrots and bake in the oven.
When you serve it freely, you can decorate it with rosemary.
