Pork ribs with dark beer and apricot jam glaze

You can prepare pork ribs in countless ways, but the right choice of spices can significantly enhance their flavor. This recipe strikes the perfect balance between sweet, salty, and aromatic, with an intriguing combination of dark beer and apricot jam. Try it and see for yourself. 😊

Ingredients:

  • 5 kg pork ribs
  • 1 cup dark beer
  • 100g apricot jam
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 4 garlic cloves (finely chopped)
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and pepper

Preparation:

Remove the membrane from the back of the ribs, if present, and season with salt, pepper, smoked paprika, and cumin. Preheat the oven to 150°C. Place the ribs on a baking tray, cover with foil, and bake for 2-3 hours until tender.

In a small saucepan, mix dark beer, apricot jam, soy sauce, brown sugar, and garlic. Cook over medium heat until the mixture thickens and reduces by one-third.

Once the ribs are baked, remove the foil and brush them with the glaze. Increase the oven temperature to 200°C and bake for an additional 10-15 minutes, until the glaze caramelizes.

Let the ribs rest for 5-10 minutes before cutting. Serve with roasted potatoes or grilled vegetables.
