Pies with white and yellow cheese fried in a pan

Ingredients for 50 pies:

  • 400 g of original grated Greek Feta
  • 100 g of grated semi-hard cheese
  • 100 g grated Graviera cheese (hard yellow cheese)
  • 150 g grated Kefalotiri cheese (hard yellow cheese)
  • 5 g of salt
  • 3 pcs of eggs
  • A pinch of dried mint
  • 1/2 kg of Presto Greek filo dough
  • 1 liter of olive oil for frying

Preparation:

Mix grated cheese, eggs, salt and mint in a bowl. Cut the filo dough into strips, lengthwise. Place the cuts on the work surface, 2 strips, one on top of the other, and coat them with oil. Put the prepared cheese mixture on the lower part of the strip and slowly fold it into a triangle shape. Fry them in oil at a medium temperature until golden yellow. Take them out of the pan and put them on a napkin to drain off the excess fat. Serve them while hot. The pies can also be arranged in a casserole, next to each other and baked in the oven at 160 degrees. You can use melted butter instead of oil.
