We can especially say this for Fiordimaso cheeses, that are famous because they are 100% natural. They are made only from milk, rennet and salt.
Their taste is special due to the specific method of production and old recipes. The company was founded in 1887 and it still uses the highest quality milk from Lombardy at the foot of the Alps, known for its untouched nature.

FORMAGGIO SINFONIA AL VINO ROSSO
Handcraft semi-hard cheese soaked in fine Italian red wine. Slightly nutty with a fruity winey pleasure aftertaste. This is a cheese whose taste is remembered and the best time to eat it is in the evening with a glass of good red wine.
FORMAGGIO SINFONIA AL PROSECCO DOC
Handcrafted semi-hard aged cheese soaked in an extraordinary fine Prosecco wine. Really flavor with Prosecco notes in harmony. Excellent pairing with white grapes, fresh fruit and sparkling white wines.

Protected designation of origin – PDO
Most Fiordimaso cheeses have a protected designation of origin. This means that Fiordimaso cheeses are of exceptional quality, as well as that their taste is directly related to the knowledge, characteristics and heritage of the climate from which they originate. In this case, it is about untouched nature at the foot of the Alps and a recipe that is over 130 years old.
MONTE GRAPPA STAGIONATO
It’s an aged cheese, intensive and a little spicy.
Excellent with appetizer or in the salads and delicious when served with red wines whose taste stays on the palate longer.
PROVOLONE VALPADANA DOP
Provolone Valpadana PDO (Protected Designation of Origin) is a semi-hard stretched curd cheese with a smooth rind, obtained using cow’s milk at natural fermentation acidity. Delicate sweet taste.
Widely used in cooking and to prepare excellent sandwiches.
ASIAGO DOP VECCHIO
It’s an historical PDO (Protected Designation of Origin) cheese aged more than 10 months.
Toasted and spicy flavors. It’s excellent if shaved onto salads or could be shredded and served on pasta, risotto, soup.
MONTASIO DOP MEZZANO
It’s a PDO (Protected Designation of Origin), medium-hard cheeses produced from a lot of centuries in north east of Italy. The mezzano is aged more than 4 months, has a decisive flavour with a distinctively striking full taste.
FONTINA VALDOSTANA DOP
It’s the antique and tipycal cheese of the Alpine mountains region Valle D’Aosta.
It’s a PDO (Protected Designation of Origin) cheese.
Fontina is a particularly tasty. Digestible cheese and lends itself to being eaten directly at the table as wheel as being used in the kitchen to prepare gourmet dishes especially because of the pleasantness of its flavor. Thanks to its ability to melt, it is also suitable for making sandwiches and toasts.
