Marinated lamb with potatoes and red onions

We present you a recipe for all those who love well-prepared lamb, juicy and crispy on the outside!

It’s necessary:

  • A piece of lamb leg or shoulder
  • 1 kg of potatoes;
  • 0.5 kg of red onion

For the marinade:

  • ½ bunch of chopped parsley;
  • A little fresh rosemary;
  • 2 bay leaves;
  • A little fresh or dry basil;
  • Olive oil;
  • Salt and pepper

Preparation

In a small bowl, make a marinade of herbs by adding chopped herbs, olive oil, salt and pepper (you can change the herbs to your taste).

Cut the lamb leg or shoulder (it is important that the meat is from a young lamb) and rub the marinade. Put the prepared meat in a baking dish, cover it with aluminum foil and let it stand for a few hours, or overnight in the refrigerator if you bought the meat earlier. If you kept the meat in the refrigerator, take it out at least 1 hour before baking. Heat the oven to 200 degrees and bake the meat for about 30 minutes, covered with aluminum foil.

During this time, clean the potatoes, cut them into pieces and boil them in salted water for 5 minutes. Then strain, dry a little and sprinkle with a little olive oil. Clean the onion and cut it in half. Take the meat out of the oven after half an hour, pour potatoes and onions around it. Return to the oven and bake for another 1 hour. Add salt to the potatoes and onions only when you take them out of the oven.
