Lemon poppy seed cake

This refreshing lemon poppy seed cake combines citrus notes with the mild crunch of poppy seeds. The lemon glaze adds extra moisture and a touch of tartness, making it perfect for those who enjoy light, aromatic desserts.

Cake ingredients:

  • 200 g flour
  • 150 g sugar
  • 1 tsp baking powder
  • A pinch of salt
  • 2 tbsp poppy seeds
  • 2 eggs
  • 120 ml milk
  • 100 ml olive oil or melted butter
  • Juice and grated zest of 1 lemon

Glaze ingredients:

  • 100 g powdered sugar
  • 2-3 tbsp lemon juice
  • Grated lemon zest (optional, for decoration)

Instructions:

Preheat the oven to 180°C and prepare a baking pan by lining it with parchment paper or greasing it lightly.

In a bowl, mix the flour, sugar, baking powder, salt, and poppy seeds. In a separate bowl, whisk together the eggs, milk, oil or melted butter, lemon juice, and zest. Add the wet ingredients to the dry ingredients and stir gently until combined. Pour the batter into the prepared pan and bake for 25-30 minutes. Cool the cake in the pan for about 10 minutes, then transfer it to a cooling rack.

In a bowl, combine the powdered sugar and lemon juice until you get a smooth, thick glaze. Pour the glaze over the cooled cake, and if desired, sprinkle with grated lemon zest. Allow the glaze to set before slicing the cake.
