Ingredients:
- 250 g spaghetti
- 3 tbsp olive oil
- 50 g butter
- 1 lemon (juice and zest)
- 50 g Parmesan cheese (or more to taste), freshly grated
- 2 garlic cloves, finely chopped
- 100 ml pasta cooking water
- Salt and freshly ground black pepper
- Fresh parsley or basil for garnish
- Optional: a pinch of chili flakes
Preparation:
Boil the pasta in salted water according to package instructions. Before draining, reserve about 100 ml of the cooking water. Heat olive oil in a large pan over medium heat. Add garlic and sauté until fragrant. Add butter to the pan and let it melt. Stir in the lemon juice and zest, combining all the ingredients. Put the drained pasta to the pan, and pour in the reserved cooking water. Stir in the grated Parmesan cheese, mixing until the cheese melts and forms a silky sauce. Season with salt and black pepper to taste.
