Lamb in marinade with dried fruit

Lamb is a favorite dish on Easter tables. Exclusively at Super Vero markets, you can buy fresh lamb of guaranteed origin. This year, we present a slightly different recipe for lamb, marinated with dried fruit, which will add a new dimension to the taste.

Ingredients:

  • Lamb 2-3 kg
  • 300-400 g dried fruit of your choice (dried plums, dried figs, dried apricots)
  • 500 g red onions
  • 6-8 cloves of garlic
  • a glass of white wine
  • Olive oil
  • 3-4 tablespoons of honey
  • a little lemon juice
  • Salt, pepper, spices to taste

Preparation:
Preheat the oven to 180°C (356°F). Cut the lamb into pieces and in a large bowl, mix olive oil, honey, lemon juice, finely chopped red and white onions, dried fruit, and spices to taste. Add the lamb to the bowl and mix well with the marinade. Let it marinate for at least an hour, preferably overnight. Place the meat along with the marinade in a large baking dish or ovenproof dish. Cover with foil. Bake in the preheated oven for about 2 hours. You can also add vegetables of your choice to bake along with the meat. After one hour, remove the foil to allow the meat to brown.

Recommendation is to marinate the meat for at least a few hours or overnight to enhance tenderness and juiciness. Proper roasting is also necessary so that the meat does not overcook and become dry. It’s best to cover the meat with foil for the first hour of baking and remove it towards the end to achieve a nice crispiness.
