Today we will show you several different ways to prepare different types of marinades and coatings for meat, which will certainly change the taste of the meat for the better.
May 1, Labor Day, is slowly approaching, and in our country it is best known for vacations in nature and barbecues.
Meat and vegetables prepared on the grill always have a special aroma and sweetness, and when we add an excellent marinade, we get a barbecue with a special taste.
Marinades are a mixture of some kind of fat and acid with the addition of spices, which should soften the meat and season it. The meat is marinated no later than three hours before it goes on the grill. Of course, we can keep it longer, but in that case we should not add a large amount of salt, because salt tends to extract moisture from the meat.
Basic marinade, most used and suitable for all types of meat and fish
Ingredients: 100 ml of sunflower oil, 100 ml of apple cider vinegar, ½ teaspoon of salt, freshly ground pepper, 3-4 cloves of garlic
Place the chopped garlic in a bowl, add salt and pepper, then mix well with a spoonful of oil and vinegar. Add the remaining amount of oil and vinegar to the mixture, then rub the meat well on all sides. In this variant, you can add various types of spices according to your taste and thus get several types of different marinades.
The so-called BBQ marinade, special for pork, is also indispensable.
What you need: 1 cup of ketchup, 2 teaspoons of sugar, ½ cup of water, ¼ cup of vinegar, 1 teaspoon of salt, 1 teaspoon of garlic powder, 1 tablespoon of mustard, 1 teaspoon of red pepper.
Place all the ingredients in a bowl and heat over low heat. Bring to a boil, reduce the heat and let the marinade cook slowly for one hour. Allow to cool at room temperature and transfer to a glass container with a lid. Store in the refrigerator.
White marinade, specific because it is used after roasting meat.
You need: 4 spoons of mayonnaise, 2 spoons of vinegar, 1 spoon of lemon juice, 1 spoon of horseradish, 1 teaspoon of mustard, 1 teaspoon of pepper. Put all the ingredients in a bowl and mix. Pour the marinade prepared in this way over the roasted meat.
Spicy marinade, this one is for people whose palate can tolerate strong spices 😊
You will need: 1 spoon of chili powder, 1 spoon of brown sugar, ½ spoon of salt, ½ spoon of pepper, ½ spoon of garlic powder, 1 spoon of red pepper, ½ spoon of pepper, 200 ml of sunflower oil, 2 spoons of mustard. Put all the ingredients in a bowl and mix. Coat meat or vegetables with marinade and leave overnight in the refrigerator.
Less well-known, but on the other hand quite tasty, is marinade with yogurt.
Ingredients: 200 ml of yogurt, 2 tablespoons of sunflower oil, zest and juice of one orange, small onion and 2 cloves of garlic, coriander and ½ teaspoon of cinnamon, teaspoon of freshly grated ginger, ½ teaspoon of salt, ground pepper. If you like eastern flavors, this is the marinade for you. Chop the dry ingredients in a bowl with the addition of oil, then mix everything with yogurt and juice and orange peel.
Dark beer marinade
Ingredients: 200 ml of ketchup, 100 ml of apple cider vinegar, 330 ml of dark beer, 100 g of brown sugar, 1 teaspoon of salt, 1 teaspoon of ground pepper, 1 tablespoon of garlic powder, ½ tablespoon of ground chili. It is necessary to cook these ingredients on moderate heat with gentle stirring. After 30-40 minutes, when you have reached the desired thickness, remove from the heat and let it cool completely. Transfer the cooled sauce to a container with a lid and store in the refrigerator.
If you have leftover marinade, you can add liquids to it, for example broth, wine, beer or a little water, and it will serve as a coating with which you can additionally season, but also smear the meat on the grill during the grilling or the last 5-15 minutes, depending on the ingredient and type meat.
Coating for beef, Ingredients: 100ml of beef broth or water, 100ml of beer, 1 spoon of mustard, ½ teaspoon of salt, pepper, paprika, chili powder, 2-3 cloves of chopped white onion, coriander powder or leaf. Mix all the ingredients, boil briefly, check the density and freely use as a coating when preparing beef.
Sweet and spicy coating, suitable for chicken and pork
Ingredients: 100 ml of balsamic vinegar, 3-4 tablespoons of honey, chili sauce, ½ teaspoon of salt, freshly ground pepper. Place the honey and balsamic in a bowl and boil very briefly to dissolve the honey. Season to taste. With this coating, make sure to use it when the meat is already cooked. Leave the coated meat in a safe part of the grill (a warm place not directly above the heat source) for a short time to absorb the sauce. Save the sauce for additional topping or dipping.
