Gibanica is a versatile dish that can be served as a main course or a snack. It can also be made as a fasting option if you use oil-based filo dough. The preparation is simple, and the result is a wonderfully delicious dish.
Ingredients:
- 500 g thin filo pastry sheets
- 400 g Sjenica cheese
- 1 cup yogurt
- 1 cup sparkling water
- 3 eggs
- 100 ml oil
- pinch of salt
Preparation:
In a bowl, mix the yogurt, eggs, crumbled cheese, and a pinch of salt until well combined.
Grease the bottom of a baking tray with oil. Lay the first sheet of filo and brush lightly with oil. Repeat with another sheet, brushing each layer with oil, until you’ve used 5-6 sheets.
Spread a portion of the filling evenly over the layers of filo. Cover with 2-3 more sheets, continuing to brush with oil.
Repeat layering the filling and filo until you’ve used all the ingredients, finishing with filo sheets on top. Brush the top with more oil.
Before baking, prick the top layer with a fork to allow steam to escape. Bake in a preheated oven at 200°C for about 45 minutes, or until the top is golden brown and crispy.
Let the gibanica cool slightly before cutting. Serve warm or at room temperature.
