Okra is a vegetable often used in Mediterranean cuisine, especially in Greece. It is extremely healthy, rich in fiber, vitamins, and minerals. It is an important part of greek culinary tradition and can be prepared in various ways, including the classic dish Μπάμιες Λαδερές, which translates to okra in tomato sauce. This dish is simple and ideal for a light meal or a side dish.
Ingredients:
- 500g frozen Ifantis okra or fresh okra
- 1 onion, finely chopped
- 3-4 cloves of garlic, finely chopped
- 500g tomatoes, chopped (canned tomatoes can also be used)
- 100 ml olive oil
- 1 tablespoon sugar
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
- Parsley for garnish
Preparation:
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5-7 minutes. Add the garlic and sauté for another 1-2 minutes. Into the sautéed onions put chopped tomatoes (or canned tomatoes), sugar, and red wine vinegar. Cook the sauce over medium heat until it thickens.
Finally, add the okra to the thickened sauce, reduce the heat, and cover the pot. Cook on low heat until the okra is tender, about 30-40 minutes. Check occasionally and add a little water if needed to prevent the dish from becoming too thick. Season with salt and pepper to taste. Once the okra is tender, remove from heat and let it cool slightly before serving.
Serve warm and sprinkle with fresh chopped parsley. It can be served as a main dish or as a side dish with meat or fish. Greek feta cheese, which you can buy exclusively at Super Vero, pairs wonderfully with okra.
