Fruit tart

Combination of a crispy crust, creamy Greek yogurt filling, and fresh raspberries and blackberries offers the perfect balance between sweet and tangy. The preparation is simple, and the result is a delicious dessert.

Ingredients:

  • 500g puff pastry
  • 200g Greek yogurt
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Zest and juice of half a lemon
  • 300g fresh raspberries and blackberries
  • A scoop of sorbet ice cream of your choice for serving

Preparation:

Preheat the oven to 180°C. Grease or line a round tart pan with parchment paper. Roll out the puff pastry, prick it with a fork, and bake for about 10 minutes or until golden brown.

Meanwhile, in a bowl, whisk together the Greek yogurt, sugar, eggs, vanilla extract, lemon zest, and juice until smooth. Once the crust has slightly cooled, pour in the filling. Evenly distribute the fresh raspberries and blackberries on top.

Return the tart to the oven and bake for an additional 25-30 minutes or until the filling is set and golden brown.

Remove from the oven and let it cool.

Tip: Serve a slice with a scoop of sorbet ice cream.
