Ingredients for a 2 kg meal:
- 1/2 kg yellow peas (fava)
- 250 g of onion
- 200-250 ml of olive oil
- 1.5 l of water
- 30 g of salt
- 2 g of pepper
Sausages (optional)
Preparation:
Clean fava and wash it with water. Put in a pan, pour water and bring to a boil. Reduce the temperature and let it cook slowly, stirring occasionally and removing the foam. Meanwhile, chop the onion and put it to fry in olive oil until it softens and gets a golden yellow color.
When the fava is cooked, add the fried onion, salt and pepper, stir well and let it simmer for a minute. Remove from the stove and mix everything well in a blender or with a stick mixer. Serve warm or cold as an appetizer. Serve with grilled or fried Myconos or Santorini sausages if desired.
