Cake with prunes

Ingredients:

  • 200 g of prunes
  • 100 g of walnuts (chopped)
  • 200 g of flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of cinnamon
  • 150 g of sugar
  • 2 eggs
  • 100 ml of oil
  • 150 ml of milk
  • 1 teaspoon of vanilla extract
  • A pinch of salt
  • Powdered sugar

Preparation:

Soak prunes in warm water for 10-15 minutes to soften. For additional flavor, you can soak prunes in rum or orange juice. Drain them and chop them into smaller pieces.

In a large bowl, mix the flour, baking powder, cinnamon and a pinch of salt. Separately, beat the eggs with sugar until they become foamy. Add oil, milk and vanilla and mix well. Gradually add the dry ingredients to the egg mixture, mixing until smooth. At the end, add chopped plums and walnuts, then mix gently. Pour the mixture into a greased and floured tray (or lined with baking paper).

Bake in a preheated oven at 180°C. Leave the cake to cool, then sprinkle it with powdered sugar before serving.
