Mandora is a fruit created by crossing a mandarin and an orange, so it combines the best of both citrus fruits. Recognizable by its intense smell, refreshing taste and thin skin, mandora brings the perfect dose of sweetness and mild bitterness, which is why it is a favorite both for snacking and in the preparation of cakes.
Ingredients:
- 3 mandoras (grated peel and juice)
- 180 g of sugar
- 3 eggs
- 120 ml of oil
- 180 g of flour
- 1 bag of baking powder
- A pinch of salt
- 50 g of almond leaves
- 1 mandora
Preparation:
- Preparation of the mixture:
In a large bowl, beat the eggs and sugar until light and fluffy. Add the oil, grated zest and almond juice and stir to combine.
- Adding dry ingredients:
In another bowl, mix flour, baking powder and a pinch of salt. Gradually mix into the egg mixture, mixing gently until you have a smooth dough.
- Baking:
Prepare a baking sheet measuring approximately 20×30 cm – line it with baking paper or grease it with oil. Pour the mixture into the pan and level it.
Spread the mandora rings evenly on top, then sprinkle with almond flakes.
Bake in a preheated oven at 180°C for about 25-30 minutes.
- Cooling and serving:
Leave the cake to cool in the pan, then cut it into cubes or bars. If you wish, you can additionally sprinkle the powder with sugar.
Tips:
✅ Instead of almonds, you can also use chopped walnuts or hazelnuts.
✅ If you want a juicier cake, you can cover it with a mild almond syrup (juice + a little honey).
✅ Keep it covered at room temperature for up to 3 days.
